Ease of setup for the workflow start, huge amount of built in integrations for collecting data, clear view of all the pending requests and their status based on the workflow setup. It's also easy to configure informative dashboars that help getting the current status of all requests at a glance.

The product offers preconfigured templates that comply with the legal requirements of your country or for us: the EU region regarding GDPR regulation. These templates were adjusted to meet our company standards and policies. The product has many types of preconfigured roles which can be used to tweak user rights to access data in the tool. We use these roles to meet the access requirements of different stakeholders in our organisation.
The biggest issue is definitely finding out what went wrong in OneTrust UI itself - the logs are really hard to read, as they're represented as a huge xml file for each workflow run, and finding quickly from them what was the cause of the failure is almost impossible.
Want to be able to do more customizations within the tool (layout of various buttons) rather than just using default. They make a big impact to consent numbers and we've had to do some dev workaround.
At the moment we have no dislikes about the product.

The process is really easy to setup, with multiple built-in integrations in place. You have the flexibility to design the workflow and starting forms/entry points for the process. It works.
We used OneTrust for cookie compliance for various countries as well as DSAR. Although it should work great in theory, we found the Cookie Banner/Consent hard to integrate and a bit buggy. DSAR works fine.
